Thermophilic microorganisms are of special interest as a source of novel thermostable enzymes. Many thermophilic microorganisms possess properties suitable for biotechnological and commercial use. There is, indeed, a considerable demand for a new generation of stable enzymes that are able to withstand severe conditions in industrial processes by replacing or supplementing traditional chemical processes. The thermozymes are the enzymes having stable activity at higher temperature (50°C to 125°C), which are purified from thermophiles or hyper thermophiles. These thermozymes are typically resistant to irreversible inactivation and optimally active at high temperature. Apart from temperature stability, thermozymes have unique properties such as chemical and pH stability. The thermozymes offers major advantages like easier to purify by heat treatment, higher resistance to chemical denaturants, withstand to higher substrate concentration, reduce the risk of contamination thus have vast industrial applications.
